Groundnut Stew

Ingredients and Directions

In:

  • ¼ cup oil

Soften:

  • 1 cooking onion, chopped

Sear, in batches:

  • 2-3 lbs lean beef (top sirloin, cubed)

Into the last batch of meat, stir in:

  • 3-4 Tbsp peanut butter

  • 1 Tbsp paprika

  • ¾ tsp cayenne

  • salt, pepper

Stir until the odour becomes that of roasted peanuts, and add:

  • 3 Tbsp tomato paste

  • 3 Tbsp flour

Add all batches of meat back to the pot and stir to coat.

Add:

  • 3-4 cups beef broth

  • 2 bay leaves

Simmer for 2 hours.

  • Serve over rice with chopped:

  • peanuts, pineapple, tomatoes, bananas, red onion

  • (and whatever else you fancy… raisins, coconut, cucumber…)

Serves 6.
