¾ cup butter, softened
⅓ cup dark brown sugar
⅓ cup granulated sugar (+1/2 cup for rolling)
1 large egg yolk
1 tsp vanilla extract
Beat until combined.
½ cup mild or robust (not blackstrap) molasses
Beat until incorporated (30 seconds).
2¼ cups all purpose flour
1 tsp baking soda
1½ tsp ground cinnamon
1½ tsp ground ginger
½ tsp ground cloves
¼ tsp ground allspice
¼ tsp pepper
¼ tsp salt
Roll 2 tbsp mixture at a time with dampened hands. Roll in granulated sugar to coat.
Space balls 2” apart.
Bake at 300 °F for 35 minutes.
Makes 24 cookies.
