Molasses Spice Cookies

Ingredients and Directions

Beat together until pale and fluffy:

  • ¾ cup butter, softened

  • ⅓ cup dark brown sugar

  • ⅓ cup granulated sugar (+1/2 cup for rolling)

Reduce speed to low, add:

  • 1 large egg yolk

  • 1 tsp vanilla extract

  • Beat until combined.

Add:

  • ½ cup mild or robust (not blackstrap) molasses

  • Beat until incorporated (30 seconds).

Combine:

  • 2¼ cups all purpose flour

  • 1 tsp baking soda

  • 1½ tsp ground cinnamon

  • 1½ tsp ground ginger

  • ½ tsp ground cloves

  • ¼ tsp ground allspice

  • ¼ tsp pepper

  • ¼ tsp salt

Slowly add flour mixture to butter mixture until just combined.

  • Roll 2 tbsp mixture at a time with dampened hands. Roll in granulated sugar to coat.

  • Space balls 2” apart.

Bake at 300 °F for 35 minutes.

Makes 24 cookies.
