Healthy Bran Muffins

Ingredients

  • 1½ c All-Bran cereal

  • 1 c buttermilk

  • ¼ c unsweetened apple sauce

  • 2 Tbsp coconut or vegetable oil

  • 1 large egg

  • ⅓ c brown sugar

  • ½ tsp vanilla extract

  • 1 c whole grain flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ c raisins – soak in hot water

Directions

  1. Preheat oven to 375 °F. Line or grease 12 muffin cups.

  2. Mix together All-Bran and buttermilk. Let sit.

  3. In a large bowl, whisk together apple sauce, oil, egg, brown sugar and vanilla. Add bran/buttermilk mixture.

  4. Add flour, baking soda, baking powder, cinnamon and salt. Stir until just combined. Add raisins.

  5. Spoon batter into muffin tins and bake for 15-20 minutes.

NOTE: Double the recipe and make 18 muffins.

Make buttermilk: 1 tsp lemon juice to 1 c milk. Let stand for 5 minutes.
