1 lemon, juiced (2-3 Tbsp)
2 Tbsp honey
2 Tbsp Dijon mustard
1 Tbsp apple cider vinegar
1/2 tsp minced garlic or shallots
1/4 twp sea salt
ground pepper, to taste
1/4 cup olive or avocado oil
Combine all ingredients in a blender or mason jar. Whisk/blend/shake.
Makes 1 cup. Store in airtight container up to one week.
