Date Filled Oat Cookies

Using electric mixer, combine:

1/2 c butter

1/2 c crisco shortening

2/3 c brown sugar, packed

Combine and stir into butter mixture:

1/2 tsp baking soda

1/2 tsp salt

1 tsp vanilla

Stir in:

2 c all purpose flour

Add 2 c rolled oats.

Roll out on floured pastry sheet until 1/8” thick. Cut into 2” rounds.

Cook on ungreased cookie sheet at 350F for 10 minutes.

Date Filling:

Combine 2 cups cut-up dates, 2/3 c water, 1/3 c brown sugar and 1 tsp lemon juice in saucepan. Cook over medium heat until thick, stirring constantly. Cool.
