Cream together:
1/2 lb butter
3/4 C + 1 Tbsp granulated sugar
3/4 C packed brown sugar
Add to creamed mixture. Beat low for 30 seconds, then on medium for 2 minutes until light and fluffy:
2 large eggs
1-1/4 tsp vanilla
1/4 tsp freshly squeezed lemon juice
Add gently, don’t overmix:
2-1/4 C flour
1/2 C rolled oats
pinch cinnamon
2-2/3 C chocolate chips
Portion with a scoop onto parchment lined baking sheet. Bake at 300F for 20-23 minutes – until edges are golden and centre is still soft.
