3 Oxo beef cubes
3 Oxo chicken cubes
12 cups boiling water
1 ham bone with some meat on it
4 cups quick cooking green or yellow split peas
2 bay leaves
3 medium onions, chopped
3 large carrots, diced
3 ribs celery with tops, chopped.
Dissolve oxo cubes in boiling water. Add remaining ingredients. Bring to a boil, cook board for 2 minutes. Turn off heat, let stand for 1 hour. Skim off any meat froth. Bring to boil, reduce heat and simmer covered for 1 hour or until peas are soft. Remove bone, bay leaves and peppercorns. If desired, remove meat from bone, cut up and add to soup. Season with salt and pepper. Serve as is or puréed.
