Pork Satay

1-1/2 pounds pork tenderloin

1/4 cup butter

1 tsp lemon juice

1/2 tsp Tabasco

3 Tbsp grated onion

3 Tbsp brown sugar

1 tsp ground coriander

1/2 tsp ground cumin

1/4 tsp ginger

1 clove garlic, crushed

1/2 cup Terriyaki sauce

salt and pepper to taste

Cut meat into 3/4” cubes and place in a shallow dish. Melt butter in saucepan and add remaining ingredients. Bring to a boil and simmer for 5 minutes.

Pour sauce over meat. Cover and leave overnight in fridge. Turn meat occasionally. Remove meat from marinade. (Save marinade) Pur 5-6 pieces on each skewer. Grill on barbecue for 15 minutes. Reheat marinade and pour over meat. Serve on bed or rice.
