Satay (Pork Tenderloin)

Satay (Pork Tenderloin)

  • 1-1/2 pounds pork tenderloin
  • ¼ cup butter
  • 1 tsp lemon juice
  • ½ tsp tabasco
  • 3 Tbsp grated onion
  • 3 Tbsp brown sugar
  • 1 tsp coriander
  • ½ tsp ground cumin
  • ¼ tsp ginger
  • 1 clove garlic, crushed
  • ½ cup Indonesian soy sauce (or Kikoman Teriyaki Sauce)
  1. Cut meat into ¾" cubes and place in a shallow dish. Melt butter in saucepan and add remaining ingredients. Bring to a boil and simmer for 5 minutes. Pour sauce over meat. Cover and leave overnight. Turn meat occasionally. Remove meat from marinade, save marinade. Put 5-6 pieces on each skewer. Grill on BBQ for 15 minutes. Reheat marinade and pour over meat. Serve on bed of rice.
